The proximity to Lake Geneva has a temperature-balancing effect and ensures long growing seasons, which favor the ripening of the grapes. Calcareous soils, gentle slopes and the reflecting surface of the lake give the wine precision, structure and a clear color. As a traditional winery, De Jolimont stands for loyalty to its origins and craftsmanship within the Swiss wine landscape.

Cave de Jolimont is part of Schenk S.A. and benefits from its many years of experience and extensive network.

Castle, Château d’Allaman and historical roots

The history of the Cave de Jolimont is closely linked to the castle and Château d’Allaman. Its origins date back to the 12th century. In 1530, the complex was destroyed during the Bernese conquest of Vaud and later rebuilt. In the 18th century, the castle experienced a cultural and agricultural boom under the Marquise Jeanne-Marguerite de Langallerie. The targeted development of the vineyards in Mont-sur-Rolle laid the foundations for the viticulture that is still cultivated today.

Image: Château d’Allaman © Leemburg-CH (CC BY-SA 4.0)

Development into a modern producer

In 1755, the estate came into the possession of the Sellon family, who shaped the vineyard for generations. Even after the change of ownership in the early 20th century, viticulture remained a central part of the château. Today, the Cave de Jolimont is part of Schenk S.A.. Under this umbrella, cellar technology and production methods have been modernized without giving up the historical identity. Since then, tradition and contemporary oenology have formed a functioning unit.

Gamay, Gamaret and Garanoir grape varieties

The wines of the Cave de Jolimont are based on classic Vaud grape varieties. Gamay delivers fruity aromas and freshness on the palate. Gamaret brings spice, depth and fine woody notes, while Garanoir provides color, structure and a lingering finish. These grape varieties complement each other perfectly and produce red wines with a balanced profile and regional character.

Winemaking, Ripasso method and Veneto influence

In vinification, De Jolimont relies on clean manual work and controlled processes. The use of the Ripasso method, inspired by the Veneto, is particularly influential. The wine gains density, bouquet and aromatic depth through the second fermentation on grape marc. This method combines Italian influence with Swiss precision and underlines the independent style of the winery.

Piacere Rouge red wine with character

The Piacere Rouge presents itself ruby red in the glass and develops aromas of ripe fruit and distinct wood notes. On the palate, this red wine is structured, balanced and has a long finish. It is ideal with Italian dishes, antipasti, mushroom risotto and pasta with eggplants and impresses with its versatility and drinking flow.

The popular Cave de Jolimont wine lines include L’As de Coeur, Piacere and Ancora. Ancora stands for a modern, innovative line that combines traditional craftsmanship with contemporary winemaking. Thierry Ciampi is the oenologist responsible for Cave de Jolimont.

Piacere Blanc white wine and aperitif culture

The Piacere Blanc is based on Chasselas and embodies freshness and clarity. Fine aromas of white fruit, floral nuances and a subtle minerality characterize this white wine. It is lively, harmonious and elegant on the palate. It is particularly appreciated as an aperitif or with light dishes, fish and summer cuisine.

Vaudois identity and artisanal products

The products of the Cave de Jolimont reflect Vaudois identity and consistent craftsmanship.
