J. Moreau & Fils in the Chablis wine region

J. Moreau & Fils is one of the oldest houses in the region and has become one of the most important Chablis producers over the years. The success story begins with Jean Joseph Moreau, who was born in Chablis and developed his expertise as a winegrower at an early age. In 1814, the young cooper J. Moreau settled in Chablis, married the daughter of a local winegrower and inherited the oldest wine house in Chablis.

The history of the house is closely linked to viticulture and the work of the winegrowers and coopers J. Moreau, who contributed significantly to the development and reputation of the company. Over time, the region has become an internationally recognized origin for high-quality wines. The wine region is located in the Chablis wine-growing area of Burgundy, between Dijon and Paris, along the Serein, a tributary of the Seine, whose banks characterize the climate and style of the wines.

The company is internationally renowned for the quality of its Burgundy wines and offers a wide range, including Chardonnay wines from Burgundy. J. Moreau & Fils has been part of the Boisset family since 1985, underlining the company’s long tradition and commitment to quality. The company was founded in 1814 and can look back on more than 200 years of history. The Chablis region and Burgundy continue to shape the identity and character of the elegant wines of J. Moreau & Fils to this day. In the hands of oenologist Lucie Depuydt, the company combines tradition and contemporary precision.

Terroir, soils and Chardonnay vine

The highly calcareous soils on which the Chardonnay vine thrives are the heart of the region. These soils give the wines their typical minerality and tension. In Chablis, the wines are made from 100 percent Chardonnay grapes, which gives them their unmistakable freshness and elegance. Viticulture began in Chablis in 1814 and the tradition continues to this day – the knowledge and passion of founder Jean-Joseph Moreau lives on in the work of modern oenologists such as Lucie Depuydt.

The Chardonnay vine thrives excellently in this wine region, as the combination of soil, climate and slopes creates ideal conditions. The white wines from Chablis, especially the renowned Premier Cru wines, are the flagship of the house and enjoy a high reputation worldwide. The vines grow on Kimmeridge limestone, rich in fossil deposits, which gives the wines structure and depth. The terroir is at the heart of all decisions, as the wines are uncompromisingly terroir-driven and clearly reflect the vintage, region and origin.

Vinification and work in the cellar

Vinification at J. Moreau & Fils is carried out with great care. Temperature-controlled fermentation in stainless steel tanks preserves the freshness of the grapes and brings out the aromas precisely. After fermentation, the wines mature on the fine lees, which gives them additional complexity and fine aromas. Maturation takes place in both stainless steel tanks and wooden barrels, depending on the vintage, which further develops the flavor profile and refines the structure of the wine. The ageing process is also controlled in order to preserve minerality, elegance and balance.

The winery is one of the oldest in the region and combines historical knowledge with modern technology. Today, in the hands of Lucie Depuydt, an oenologist who places particular emphasis on preserving the fine Chardonnay aromas, each vintage is interpreted individually without masking the character of the terroir.

Chablis AOC Gloire de Chablis

The Chablis AOC Gloire de Chablis shows the classic style of the appellation. Intense citrus notes unfold on the nose, accompanied by a hint of grapefruit, white flowers such as jasmine and fine acacia blossom. This is joined by fresh fruit, a hint of honey and subtle nuances of roasted hazelnuts as well as some mocha, which underline the aromatic complexity. On the palate, the wine is golden yellow in color, fresh and precise, with clear acidity, moderate alcohol content and an elegant fruitiness of peach and citrus. The structure is straightforward, the finish is long and saline, and the finale is convincing with a fine balance of freshness, fruit and a subtle hint of hazelnuts. This wine is a poem – a poetic interplay of flavors that reflects the philosophy of the house to let the Chardonnay vine speak pure and unadulterated.

Chablis 1er Cru AOC Vallons

The Chablis 1er Cru AOC Vallons comes from a particularly privileged location. It reveals deeper aromas, more density and additional complexity. The nose reveals ripe citrus fruit, white peach and a pronounced minerality. The palate combines power and finesse, supported by a precise acidity. The finish is long, structured and elegant, which clearly distinguishes this wine from classic Chablis.

Wine and food in Burgundian style

Chablis wines from this region show great versatility at the table. They are a classic accompaniment to seafood such as oysters, mussels or scallops. Fish dishes such as fried trout, pikeperch or sole also benefit from the freshness and minerality. Cheese with a soft texture, such as goat’s cheese or young Comté, also harmonize well. These wines also go well with poultry, veal with light sauces or vegetarian dishes with fennel, asparagus or leek. The clarity of the aromas enhances the dishes without overpowering them.

The elegant, dry Chablis white wines from J. Moreau & Fils are particularly well suited to accompanying fish and seafood.
